Every kitchen is different. This checklist is a general starting point, not a one-size-fits-all rule. Your equipment, layout, and local health unit's requirements vary. The daily checklist tells me what the closer sees. The weekly one tells me what the manager sees. Closers wipe surfaces every shift. What they do not do is pull the fryer baskets, descale the dish machine, or lift the floor mats. That is a weekly job, and it needs a weekly system with a name and a signature against each task.

Common questions

What day should it be done?

The slowest day of your week, ideally before service. For most kitchens that is a Tuesday or Wednesday morning. The day matters less than picking one and sticking to it, since consistency is what builds the habit.

Can I split the tasks across the week?

Yes, and it is the easier way to run it. Spread the 13 tasks across days, oven one day, fryers the next, walk-in after that, so no single shift gets slammed with the whole list. Use the line at the top of the PDF to record which task lands on which day.

Who signs it off?

The manager. Daily cleaning is closer-signed, weekly is manager-signed. Weekly tasks involve equipment teardown like fryer baskets and oven racks, where a missed step can cause damage, so the sign-off confirms each task was done correctly, not just done.

What about vent hoods and grease traps?

Those are usually monthly, not weekly. They need a specialist and pull-out cleaning that disrupts service, so they live on the Monthly Deep-Clean Schedule. This checklist covers the tasks your in-house team can do without specialty equipment.
